Cold Pressing
Cold pressing is an ancient, traditional method in which seeds are not heated before, during or after the pressing process. Seeds are cleaned and then mechanically pressed at a slow pace to limit friction and avoid elevating temperatures. Our oil is pressed at low temperatures (40◦C max) to the exclusion of light and oxygen which are harmful to the nutrients in cold-pressed oils. We then let the oil sit for 24 hours before bottling. The natural coolness never robs the seed of its’ vitamins, minerals or essential oils, so the resulting oil is fresh, full of flavour and has the nutritional power similar to that of the whole seed. Cold-pressed oils are made up of essential fatty acids and vitamin E while the whole seeds provide minerals, fibre and some essential fatty acids.
Highwood Crossing Cold Pressed Canola and Flax Oil are pressed from certified organic and non-GMO seed. Our oil is unrefined and pressed fresh, to order, each week and is not mass produced and stored for future use.
