Flaxseed Oatmeal Cookies
A popular, easy, and all-around snack made healthier to enjoy at home or on the road…

1/3 cup Butter, softened
1/4 cup Highwood Crossing Canola Oil
3/4 cup Brown Sugar
1 Egg
1 teaspoon Vanilla
1/4 teaspoon Cinnamon
1 cup Highwood Crossing Rolled Oat Flakes
1 1/4 cup Highwood Crossing Flaxseed Muffin and Pancake Mix
1/4 cup Ground flaxseed*
1/2 teaspoon Baking powder
1/2 teaspoon Baking soda
1/4 teaspoon Salt
1 cup Raisins or chocolate chips or pecans or mixture

*2 tablespoons of seeds grind up to the 1/4 cup of ground flaxseed required for this recipe*

In a bowl combine the butter, oil, brown sugar, egg and vanilla. In another bowl combine the cinnamon, rolled oats, flour, flaxseed, baking powder, baking soda and salt.

Add the wet mixture to the dry mixture and mix. Fold in the raisins/chocolate chips/pecans.

Spoon batter onto greased cookie sheet and bake at 375ºF for 10 minutes.

Makes about 18 cookies. We like to use a small ice cream scoop to measure the cookie dough = cookies that are close in size and great for gifts.

Variation: Try adding ¼ tsp. cloves, ½ tsp. nutmeg and ½ cup raisins and ½ cup walnuts for a Hermit Oatmeal Cookie.
